All you need is a balanced meal

Not a superfood, a supplement or a crash diet. One plate that is complete, tastes good, follows the season and leaves you light. Here is what that looks like, and how we put it in every NOSH7 bowl.

Most people who decide to eat better start by adding something: a protein shake, a green juice, a vitamin, a diet they saw on Instagram. Very few change the thing they repeat twice a day, every day. The plate itself.

That is the idea NOSH7 is built on. You do not need a miracle food. You need a balanced meal, eaten again and again until it is simply how you eat. In our kitchen a meal has to pass four tests before we call it balanced. Miss one, and it does not last.

  • CompleteEvery nutrient group, not only protein
  • EnjoyableFood you look forward to
  • SeasonalWhat the season does best
  • LightFull, but never heavy

What is a balanced meal?

A balanced meal is one plate that gives you protein, plenty of vegetables for fibre, a measured portion of good carbohydrates and a little healthy fat, in a mix that keeps you full and steady until your next meal.

India's own nutrition guide says the same. The Dietary Guidelines for Indians released by ICMR-NIN in 2024 ask for food from at least eight food groups, with vegetables, fruits, greens and roots making up about half the plate. The point is variety and proportion, not one hero ingredient.

1. Complete: every nutrient group, not only protein

Protein is the fashionable nutrient right now, and it does matter. But a plate of paneer and nothing else is not balanced either. Fibre, vitamins, minerals and fats do jobs that protein cannot do.

The everyday vegetarian plate usually leans the other way. Roti and rice are generous, the sabzi is often potato, and the protein, a small katori of dal, is the smallest thing on the plate. The fix is not cutting carbs to zero. It is changing the proportions: more vegetables, a real portion of protein, a measured portion of grain.

That is how every NOSH7 bowl is built. Each one is 400 to 450 grams, high in protein and fibre and low in carbs, with 20g or more of protein on the Healthy Fresh plan and 40g or more on Muscle Gain, all from a pure vegetarian kitchen.

2. Enjoyable: a meal you dread is a diet you will quit

Most healthy eating does not fail on day one. It fails on day nine, when the same boiled vegetables come round again and a pizza starts to look like a reward.

Taste is not a luxury in a healthy diet. It is what makes it last. So we build flavour from herbs, spices and dressings instead of extra oil and sugar, and we borrow from kitchens around the world: a Thai Curry Salad, a Tex Mexican Rice Bowl, a Mint Paneer Bowl, Chana Chatpata, a Greek Fusion bowl, a Palak Chilla Wrap. Our menu rotates over five weeks, Monday to Saturday, with two menus every day, so you eat a different bowl through the month.

It actually feels like a meal, not “diet food pretending to be a meal”.

3. Seasonal: eat what the season is giving you

The Fruit Dish Pack: fresh cut seasonal fruit, no added sugar.

Fruit and vegetables in season are usually fresher, tastier and cheaper, because they did not have to be stored for months or travel far to reach you. What your body wants also moves with the weather: cooling, water rich food in an Ahmedabad May, warming greens and roots in January.

We are at the turn right now. As October becomes November, the winter greens and roots start to arrive, and they are some of the best produce of the whole year.

At NOSH7 the menu changes with seasonal produce, and the Fruit Dish Pack is fresh cut seasonal fruit with no added sugar.

Summer, March to June

Watermelon, mango, cucumber, mint, lemon. Water rich and cooling. Think nimbu pani, not cola.

Monsoon, July to September

Sweet corn, pear, papaya and lightly cooked vegetables. Wash greens well on the humid days.

Winter, November to February

Palak, carrot, beetroot, green peas, cabbage, jamfal and malta. Peak season for greens and roots.

4. Light: full, but never heavy

Light does not mean small. A light meal is one you finish full and an hour later still feel good: awake for the afternoon meeting, no bloating, no second chai and biscuit to stay awake.

Heaviness usually comes from oil, refined flour and an oversized portion of rice or roti, not from the amount of food. Vegetables give a meal volume with few calories, protein and fibre keep you full, and a measured portion of grain gives energy without the slump.

A NOSH7 bowl is 400 to 450 grams of food, and most bowls come in at 380 to 450 calories. It is cooked with low oil, fresh in every batch, about an hour before we send it out.

Build a balanced plate at home in five steps

You do not need us to eat like this. Here is the method we cook by, in a form you can use in your own kitchen tonight.

  1. Fill half the plate with vegetables. At least two colours, some raw and some cooked.
  2. Add a palm sized portion of protein. Paneer, tofu, chana, lobia, rajma, sprouts, a moong chilla, a bowl of dal or curd.
  3. Keep grains to about a quarter. Brown rice, one or two rotis, a millet or a chilla.
  4. Add a little healthy fat. A few nuts or seeds, some avocado, or a spoon of good oil in the dressing.
  5. Finish with flavour you love. Lemon, fresh herbs, a chutney or a dressing. This is the step that brings you back tomorrow.

A simple check: notice how you feel an hour after eating. Full, awake and comfortable means the plate was balanced. Sleepy and heavy usually means too much grain or oil. Hungry again usually means too little protein or fibre.

Questions people ask

Is a salad a balanced meal?

Only if it has protein, a measured portion of carbohydrate and a little fat as well as vegetables. Lettuce and cucumber on their own are a side dish. NOSH7 salad meals are 400 to 450 gram bowls built around paneer, tofu or legumes, with a grain or a wrap and a dressing, so they work as a full meal.

Can a vegetarian meal give enough protein?

Yes. Paneer, tofu, chana, lobia, rajma, sprouts, moong and curd are all good sources. A NOSH7 bowl has 20g or more of protein on Healthy Fresh and Low Sugar, 30g or more on Weight Loss and 40g or more on Muscle Gain.

Does a balanced meal mean no rice or roti?

No. Grains give energy. Balance means a measured portion, about a quarter of the plate, next to plenty of vegetables and a real portion of protein.

Do NOSH7 meals change with the season?

Yes. The menu rotates over five weeks and can change with seasonal produce, and each day's menu is sent on WhatsApp. The Fruit Dish Pack is fresh cut seasonal fruit with no added sugar.
